Devizes has always had its own pie, but the traditional version might not appeal today.

In 2021 we ran a competition to find two new pies, one meat one vegetarian, generously sponsored by Walter Rose and Son.   Here is the recipe for the meat pie

The original version of the Devizes Pie


THE WINNING VEGETARIAN PIE WAS CREATED BY GEOFF BAKER

DEVIZES “NUNCHIN” PIE in herbed pastry.

[Nunchin is an old Wiltshire for luncheon]

INGREDIENTS

Pastry

Plain flour, butter, mixed herbs, salt, water.

Filling

    • Chilli jam made with raspberry jam and Wiltshire Chilli Farm ‘Reaper’ sauce.
    • Potatoes, onions, garlic, butternut squash, white pepper.
    • Bath Blue cheese, mature cheddar cheese, double cream, hard-boiled eggs

Method

  1. Cook the vegetables individually, make the pastry, spread the pastry inner layers top and bottom with chilli jam and assemble all ingredients in layers. Paint pastry with beaten egg.
  2. Bake at 190c for 25 minutes.
